
Vegan White 'Chicken' Chili

Ingredients
- 4 cans Cannellini beans
- 4 cups Vegetable broth
- 1 can Coconut milk
- 1 large Yellow onion
- 4 cloves Garlic
- 2 cans (4oz) Green chilies
- 1 tbsp Cumin
- 1 tsp Oregano
- 1 to taste Salt and pepper
- 2 tbsp Olive oil
- 1 bunch Cilantro
- 2 whole Lime
Instructions
- Heat olive oil in a large pot over medium heat. Sauté diced onion until translucent, about 5 minutes.
- Add garlic, cumin, and oregano. Cook 1 minute until fragrant.
- Add beans (drained), green chilies, and broth. Bring to a boil. *(5 min)*
- Reduce heat, stir in coconut milk. Simmer 20 minutes, stirring occasionally. *(20 min)*
- Mash some beans against the side of the pot for thickness. Season with salt and pepper.
- Serve topped with fresh cilantro and a squeeze of lime.
