Loaded Vegan Nachos

Ingredients

  • 1 bag Tortilla chips
  • 1 block Extra-firm tofu
  • 2 whole Bell peppers
  • 1 medium Yellow onion
  • 8 oz Mushrooms
  • 0.5 cup Salsa
  • 3 tbsp Nutritional yeast
  • 1 handful Cilantro
  • 1 whole Jalapeño
  • 0.25 cup Vegan sour cream (optional)

Instructions

  1. Preheat oven to 400°F. Drain and crumble tofu. Press excess moisture with towels.
  2. Sauté tofu crumbles in oil over medium-high heat with taco seasoning until browned, about 8 minutes. *(8 min)*
  3. Dice peppers, onion, mushrooms. Sauté in same pan 5 minutes until softened.
  4. Spread chips on a sheet pan. Top with tofu, veggies, nutritional yeast.
  5. Bake 5-7 minutes until heated through and edges are crispy. *(6 min)*
  6. Top with salsa, jalapeño slices, cilantro, and optional vegan sour cream.
