
Loaded Vegan Nachos

Ingredients
- 1 bag Tortilla chips
- 1 block Extra-firm tofu
- 2 whole Bell peppers
- 1 medium Yellow onion
- 8 oz Mushrooms
- 0.5 cup Salsa
- 3 tbsp Nutritional yeast
- 1 handful Cilantro
- 1 whole Jalapeño
- 0.25 cup Vegan sour cream (optional)
Instructions
- Preheat oven to 400°F. Drain and crumble tofu. Press excess moisture with towels.
- Sauté tofu crumbles in oil over medium-high heat with taco seasoning until browned, about 8 minutes. *(8 min)*
- Dice peppers, onion, mushrooms. Sauté in same pan 5 minutes until softened.
- Spread chips on a sheet pan. Top with tofu, veggies, nutritional yeast.
- Bake 5-7 minutes until heated through and edges are crispy. *(6 min)*
- Top with salsa, jalapeño slices, cilantro, and optional vegan sour cream.
