
Chickpea Crunch Wraps

Ingredients
- 2 cans Chickpeas
- 4 whole Large flour tortillas
- 0.5 cup Hummus
- 1 whole Cucumber
- 1 cup Cherry tomatoes
- 0.5 small Red onion
- 4 leaves Romaine lettuce
- 2 tbsp Lemon juice
- 1 tbsp Olive oil
- 0.5 tsp Smoked paprika
Instructions
- Drain chickpeas. Toss with olive oil, paprika, salt, and lemon juice. Lightly mash half for texture.
- Dice cucumber, halve tomatoes, thinly slice red onion.
- Spread hummus on each tortilla. Layer lettuce, chickpeas, veggies.
- Fold wrap: bottom up, sides in, then roll. Cut in half on diagonal.
- Optional: Press in a dry skillet 2 minutes per side for a crispy finish.
