Chickpea Crunch Wraps

Ingredients

  • 2 cans Chickpeas
  • 4 whole Large flour tortillas
  • 0.5 cup Hummus
  • 1 whole Cucumber
  • 1 cup Cherry tomatoes
  • 0.5 small Red onion
  • 4 leaves Romaine lettuce
  • 2 tbsp Lemon juice
  • 1 tbsp Olive oil
  • 0.5 tsp Smoked paprika

Instructions

  1. Drain chickpeas. Toss with olive oil, paprika, salt, and lemon juice. Lightly mash half for texture.
  2. Dice cucumber, halve tomatoes, thinly slice red onion.
  3. Spread hummus on each tortilla. Layer lettuce, chickpeas, veggies.
  4. Fold wrap: bottom up, sides in, then roll. Cut in half on diagonal.
  5. Optional: Press in a dry skillet 2 minutes per side for a crispy finish.
